Banana Bread

This is my best banana bread recipe! It has a moist texture, banana and brown sugar flavors with a dash of cinnamon. The spelt flour gives the bread a nutty and tangy flavor which blends perfectly with the sweet banana taste.


  • 3 ripe bananas
  • 1/2 cup of butter, room temperature
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup spelt flour (can be switched for all-purpose flour)
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt


  1. Preheat the oven to 400°F / 200°C, and butter and flour a loaf pan.
  2. Mash the bananas with a fork until smooth.
  3. In a big bowl, mix butter and the sugars until even. Add the eggs, vanilla extract and mashed bananas and mix until evenly distributed.
  4. Mix the dry ingredients. Add to the batter and mix.
  5. Pour the batter into your prepared loaf pan.
  6. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
