
This is my best banana bread recipe! It has a moist texture, banana and brown sugar flavors with a dash of cinnamon. The spelt flour gives the bread a nutty and tangy flavor which blends perfectly with the sweet banana taste.
Ingredients
- 3 ripe bananas
- 1/2 cup of butter, room temperature
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup spelt flour (can be switched for all-purpose flour)
- 1 tbsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 400°F / 200°C, and butter and flour a loaf pan.
- Mash the bananas with a fork until smooth.
- In a big bowl, mix butter and the sugars until even. Add the eggs, vanilla extract and mashed bananas and mix until evenly distributed.
- Mix the dry ingredients. Add to the batter and mix.
- Pour the batter into your prepared loaf pan.
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
