Brownie Cookies

I love brownie cookies, they’re fast to make and fast to bake, only a few minutes in the oven. Brownie cookies are the perfect combo of chewy and sticky. Add some flake salt on top and really bring out the chocolate flavour!

  • ½ cup (125g) Butter
  • 7 oz (200g) Dark Chocolate, chopped
  • ¾ cup (2 dl) Granulated Sugar
  • 1/2 cup (1 dl) Light Brown Sugar
  • 2 Eggs
  • 1 tsp Baking Powder
  • 1 ¼ cups (3 dl) All Purpose Flour
  • 3 tbsp Cocoa Powder
  • 2 pinches of flake salt


  1. In a small saucepan, melt the butter on low heat and add in the chocolate. Mix until smooth.
  2. In a large bowl, add granulated sugar, light brown sugar and two eggs. Mix on high speed for 5 minutes until thick and creamy.
  3. In a medium sized bowl, mix baking powder, all purpose flour and cocoa powder.
  4. Add the flour mixture into the egg mixture. Mix on low speed until just combined.
  5. Add in the melted chocolate and mix on low speed until combined.
  6. Line 2 baking sheets with parchment paper. Scoop 1-2 tablespoons of dough with a small ice cream scoop and place on the baking sheets.
  7. Bake at 350° F/175° C for 7-9 minutes.
  8. Sprinkle flake salt on top immediately after taking them out of the oven and let cool. Enjoy!
