Halloween Cupcakes

A yummy mix of chocolate cupcakes and cream cheese frosting makes these spooky cupcakes a perfect treat for Halloween. Orange food coloring gives these cupcakes their bright orange frosting. Finish off with some melted dark chocolate and fondant ghosts, pumpkins and bats for decoration. Happy Halloween!

Ingredients

Cupcakes

  • 3 eggs
  • 1/2 cup (1 dl) Brown Sugar
  • 3/4 cup (1 3/4 dl) Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1/4 cup (1/2 dl) Vegetable Oil
  • 1/2 cup (1 dl) Sour Cream
  • 2 tbsp Water, Cold
  • 1 1/2 cups (3 1/2 dl) All Purpose Flour
  • 1/4 cup (1/2 dl) Cocoa
  • 1/2 tsp Salt
  • 2 tsp Baking Powder
  • 3 1/2 oz (100 g) Dark Chocolate

Cream Cheese Frosting

  • 7 oz (200 g) Cream Cheese
  • ½ cup (120 g) Butter, Room Temperature
  • 6 cups (14 dl) Powdered Sugar, Sifted
  • 1 tbsp Vanilla Extract
  • 2 tbsp Heavy Cream
  • Orange Food Coloring
  • Fondant Halloween Decorations

Instructions

Cupcakes

  1. In a large bowl, whisk together 3 eggs, brown sugar, granulated sugar and vanilla extract until smooth and fluffy. Whisk in vegetable oil, water and sour cream.
  2. In a medium bowl, whisk together flour, cocoa, salt and baking powder.
  3. Add the flour mixture into the sour cream mixture. Stir until well combined.
  4. Chop up the chocolate into small pieces and melt in a water bath. Add to the batter and mix until combined.
  5. Line a cupcake tray and fill two-thirds full with batter.
  6. Bake for about 15 minutes at 350°F or 175°C. Let cool.

Frosting

  1. In a big bowl, mix cream cheese, room temperature butter, vanilla extract and heavy cream. Slowly add powdered sugar and beat until smooth.
  2. Add orange food coloring and mix.
  3. Scoop frosting in piping bag fitted with a #829 tip.
  4. Melt chocolate over water bath and add into decorating bag.
  5. On completely cool cupcakes, pipe two swirls of the frosting on top of each one.
  6. Drizzle the melted chocolate on top and add a fondant Halloween decoration.
