Swedish Toffee Cookies

This cookie is a real Swedish classic to enjoy with your coffee! This is the au naturel recipe but you can do endless variations on these.

  • 1/2 Cup (100g) Room Temperature Butter
  • 1/2 Cup (1 dl) Granulated Sugar
  • 2 Tablespoons Light/Golden Syrup
  • 1 Teaspoon Vanilla Extract
  • 1 Cup (2 1/2 dl) All Purpose Flour
  • 1 Teaspoon Baking Powder


  1. In a big bowl, mix room temperature butter, granulated sugar, light syrup and vanilla extract.
  2. In a medium size bowl, mix all purpose flour and baking powder until evenly distributed.
  3. Add the flour mixture into the butter mixture. Mix until it becomes a grainy dough.
  4. Work with hands until dough comes together.
  5. Divide into three even pieces and roll them out into three long rolls with both hands.
  6. Place the rolls on a lined baking sheet and flatten each roll.
  7. Using the tines of a fork, form diagonal grooves along each roll.
  8. Bake at 350 °F / 175 °C for about 12 minutes.
  9. Let cool for about 2 minutes, and cut into diagonal pieces.
