
This cheesecake recipe is the perfect mix between chewy chocolate chip cookies and soft and creamy cheesecake. I use a mix between white chocolate chips and dark chocolate chips for these.

Ingredients
Chocolate Chip Cookie Dough
- 2 cups (4 ¾ dl) all purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 2/3 cup (150 g) butter, room temperature
- 2/3 cup (1 ½ dl) brown sugar
- ½ cup (1 dl) granulated sugar
- 1 egg
- 2 tsp vanilla
- 2 cups (4 ¾ dl) chocolate chips (dark and white chocolate)
Cream Cheese Filling
- 8 oz (225 g) cream cheese
- ½ cup (1 dl) sugar
- 2 tsp vanilla sugar
- 1 egg
Instructions
- In a medium sized bowl, add all purpose flour, baking soda and salt. If using vanilla sugar. Mix.
- In a big bowl, add the butter, brown sugar and granulated sugar. Mix.
- Add one egg and vanilla and mix.
- Add the flour mixture, sifted. Mix until it’s an even dough.
- Add chocolate chips and fold into the dough with a spatula.
- In a separate big bowl, add all the ingredients for the cream cheese filling and mix until smooth.
- Spread out 1/2 of the cookie dough on a baking tray lined with baking paper.
- Spread the cream cheese mixture on top of the cookie dough.
- Crumble 1/2 of the cookie dough on top of the cream cheese.
- Bake at 350° F/175° C for 40 minutes.
- Let cool and cut into bars, 5×3.
Tip! If using vanilla sugar, add it in on the first step.
