Chocolate Chip Cookie Cheesecake Bars

This cheesecake recipe is the perfect mix between chewy chocolate chip cookies and soft and creamy cheesecake. I use a mix between white chocolate chips and dark chocolate chips for these.

Chocolate Chip Cookie Dough

  • 2 cups (4 ¾ dl) all purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 2/3 cup (150 g) butter, room temperature
  • 2/3 cup (1 ½ dl) brown sugar
  • ½ cup (1 dl) granulated sugar
  • 1 egg
  • 2 tsp vanilla
  • 2 cups (4 ¾ dl) chocolate chips (dark and white chocolate)

Cream Cheese Filling

  • 8 oz (225 g) cream cheese
  • ½ cup (1 dl) sugar
  • 2 tsp vanilla sugar
  • 1 egg


  1. In a medium sized bowl, add all purpose flour, baking soda and salt. If using vanilla sugar. Mix.
  2. In a big bowl, add the butter, brown sugar and granulated sugar. Mix.
  3. Add one egg and vanilla and mix.
  4. Add the flour mixture, sifted. Mix until it’s an even dough.
  5. Add chocolate chips and fold into the dough with a spatula.
  6. In a separate big bowl, add all the ingredients for the cream cheese filling and mix until smooth.
  7. Spread out 1/2 of the cookie dough on a baking tray lined with baking paper.
  8. Spread the cream cheese mixture on top of the cookie dough.
  9. Crumble 1/2 of the cookie dough on top of the cream cheese.
  10. Bake at 350° F/175° C for 40 minutes.
  11. Let cool and cut into bars, 5×3.

Tip! If using vanilla sugar, add it in on the first step.
