Easter Cupcakes

This is my favourite vanilla cupcake recipe! Decorated for Easter with some chocolate and nougat eggs.

Ingredients  

Cupcakes

  • 3 Eggs
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla
  • 2/5 cup Butter
  • 1/2 cup Milk
  • 1 1/2 cup All Purpose Flour
  • 2 pinches Flake Salt
  • 2 tsp Baking Powder

Cream Cheese Frosting

  • 1/4 cup Butter
  • 2 cups Powdered Sugar
  • 1 tsp Vanilla
  • 2/5 cup Cream Cheese
  • 1 tbsp Lemon Juice
  • Chocolate Eggs for decorating

Instructions 

Cupcakes

  1. In a big bowl, add eggs and granulated sugar. With a hand mixer, mix on medium speed until white and fluffy.
  2. Melt the butter and add the milk. Mix.
  3. Add the butter and milk into the egg mixture. Mix until evenly distributed.
  4. In a medium sized bowl, add all purpose flour, salt and baking powder. Mix.
  5. Add the flour mixture into the batter. Mix on low speed until even.
  6. Place a liner in each slot of a cupcake pan and fill it with batter.
  7. Bake at 350 degree F/175 degree C until pale golden, about 15 minutes.

Cream Cheese Frosting

  1. Using a hand mixer, mix together room temperature butter, powdered sugar, vanilla, cream cheese and lemon juice until it’s smooth and creamy.
  2. Scoop the frosting into a piping bag with a spatula and twist the ending. I use a 849 tip which is a closed star.
  3. Make a circle of frosting on the edge of the cupcake. Add some chocolate eggs in the center.
