This is my favourite vanilla cupcake recipe! Decorated for Easter with some chocolate and nougat eggs.

Ingredients
Cupcakes
- 3 Eggs
- 1 cup Granulated Sugar
- 1 tsp Vanilla
- 2/5 cup Butter
- 1/2 cup Milk
- 1 1/2 cup All Purpose Flour
- 2 pinches Flake Salt
- 2 tsp Baking Powder
Cream Cheese Frosting
- 1/4 cup Butter
- 2 cups Powdered Sugar
- 1 tsp Vanilla
- 2/5 cup Cream Cheese
- 1 tbsp Lemon Juice
- Chocolate Eggs for decorating
Instructions
Cupcakes
- In a big bowl, add eggs and granulated sugar. With a hand mixer, mix on medium speed until white and fluffy.
- Melt the butter and add the milk. Mix.
- Add the butter and milk into the egg mixture. Mix until evenly distributed.
- In a medium sized bowl, add all purpose flour, salt and baking powder. Mix.
- Add the flour mixture into the batter. Mix on low speed until even.
- Place a liner in each slot of a cupcake pan and fill it with batter.
- Bake at 350 degree F/175 degree C until pale golden, about 15 minutes.
Cream Cheese Frosting
- Using a hand mixer, mix together room temperature butter, powdered sugar, vanilla, cream cheese and lemon juice until it’s smooth and creamy.
- Scoop the frosting into a piping bag with a spatula and twist the ending. I use a 849 tip which is a closed star.
- Make a circle of frosting on the edge of the cupcake. Add some chocolate eggs in the center.
